Hi Deidre,
This is one of the main attractions to SATS training for me, incorporating rhythm into training, both in bridging, massaging, and giving tactile support.

You could make him an expert in scenting.
You can take a beginning tracking class, or do simple things at home like teach him to discriminate and learn the names of spices. I would name the objects he is sniffing while he is sniffing them, then turn that into a game.
